Fruit Filling

1 Cup Cooked Dried Appricots
1 Cup Drained Canned Crushed Pineapple
1/2 Cup Sugar
1 Cup Grated Coconut
3 tblspns. Orange Juice
1/2 tspn. Grated Orange Peel
Combine the apricots, pineapple and sugar in saucepan. Cook and stir over low heat for 5 min., or until mixture is clear. Cool. Add orange juice, peel and coconut. Chill befor spreading between spice cake layers. Makes 2 and 1/3 cups.
