Cream of Caulifflower Soup
Ingredients
1 Small Cauliflower
! Onion
1 tablespoon Wholewheat Flour
1 Pint Hot Milk
Fresh Chopped Parsley or Chives to Garnish
1 Pint Water
1 oz. Butter
1 tsp. Brown Sugar
1/4 Pint Top Milk

Method
Cut cauliflower into really small pieces. Slice onions. Place fat and onion in large pan and stir about then gently cook for 5 minutes. Gradually add flour whilst stirring. Add water, cauliflower and hot milk. Bring to boil and simmer for 15 minutes. Sieve. Season if liked. Return to pan and boil. Remove from heat, add top of milk and serve in hot tureen with parsley or chives to garnish.
