Brinjal Salad

Ingredients
2 or 3 large brinjals
1 Onion
2 Cloves of Minced Garlic
2 Tblspn. Lemon Juice
Salt
Pepper
Method
Take 2 or 3 large brinjals, roast well in jackets and allow to cool. Cut in half and scoop vegetable into a dish. Mash the brinjal, adding one medium minced onion, two cloves of minced garlic, two tablespoons lemon juice. Season with salt and pepper and mix well.
