Avocado and Apple Salad

1 Large or 2 Meedium Sized Avocados
4 Small Apples
Juice of 1 Lemon
1-1/2 Cups Diced Celery
1 Cup Mayonnaise (Soy)
2 Green Peppers
Pare, core and dice apples. Sprinkle with lemon to prevent discolouration. Add cubed avocado and diced celery. Mix gently with fork and chill. When ready to serve add about 3/ of the mayonnaise. Serve on individual salad plates on crisp lettuce. Top with maymonnaise. Slice green peppers in rings and garnish salad with them.
