Carrot & Date Salad

2 Cups Shredded Carrots
1 Apple Pared Cored and Grated
1/2 Cup Pitted Snipped Dates
1/2 Cup Mayonnaise (Soy)
1 tblspn. Lemon
Pineapple or Orange Juice
Combine carrot, apple and dates. Add with mayonnaise and fruit juice and toss to moisten. Makes 4 servings.
