Rice Pudding

8 Cups Milk
1 Cup Sugar
Rind of 1 Lemon
1 Cup Rice
1 tblspn Cinnamon
Wash rice. Place milk in a heavy pan and, as it comes to the boil, add rice. Reduce the heat when it comes to the boil again, and simmer gently for 30 minutes, stirring frequently. Add sugar and lemon rind and simmer for another 10 minutes. Serve hot, or cold, sprinkled with cinnamon.
