Ground Rice Pudding
Ingredients
4 oz. Groound Rice
4 oz. Castor Sugar
1-1/4 Pints Milk
1/2 Cups Rose Water

Method
Mix the ground rice with a little milk taken from the 1-1/4 pints, making a paste of it. Stir this paste back into milk and cook slowly in a heavy saucepan until the mixture thickens. Add the castor sugar and rose water, stir, then remove from the stove and beat the mixture for fully 5 minutes. Rinse out a mould with a little rose water, and pour the pudding mixture into it. Leave until firmly set and cold, then turn out for serving. Sprinkle with rose water, castor sugar, pistachios and almonds.
