Iced Grapefruit Sherbet
Ingredients
6 Grapefruit
1 Pint Water
2 lbs. Sugar

Method
Grate one grapefruit, without removing any white pith. Squeeze juice and set aside. Peel the rind thinly from skins and simmer in the water and sugar for 10 minutes. Strain and cool, add the juice and the grated rind, and freeze until firm. Place in a bowl and beat until fluffy. Return to refrigerator, and chill again. Serve in tall glasses as an appetiser, instead of plain grapefruit.
