Tomato Scones

4 tspn. Baking Powder
2 Cups Flour
4 tblspns. Butter
1/2 tspn Salt
3/4 Cup Canned Tomato Juice
Sift the flour, salt and baking powder into a bowl. Rub in the butter finely and add the tomato juice. Stir to blend to a very soft dough. Turn onto a floured board and toss with floured hands to smooth. Pat out, or roll out to 3/4" thickness and cut into small rounds, or any desired shape. Place on a lightly greased baking sheet and bake at 475o F for 10 -1 2 minutes. For a more piquant flavour, add 2 tspn. Finely grated onion, or juice, to the tomato juice befor mixing.
These pink scones are delicious split, buttered and used as a base for savoury fillings.
