Spanish Potato & Pea Salad

Ingredients
2 Cups Cooked Diced Potatoes
1/2 Cup Cooked Peas
1 tspn. Grated Onion. 1 tblspn. Chopped Pimento
1 tblspn. Olive Oil
2 tblspn. Soy Mayonnaise
Salt
Pepper to Taste
Method
Combine 2 Cups cooked diced Potatoes with 1/2 Cup cooked Peas, 1 tspn. Grated Onion. 1 tblspn. Chopped pimento, 1 tblspn. Olive Oil, 2 tblspn. Soy Mayonnaise and salt and pepper to taste. Chill. Makes 4 servings.
