Hot Buns
Ingredients
12 oz. Flour
1 Cake Yeast
2 - 4 oz. Dried Fruit
2 oz. Butter
1/2 tspn Candied Peel
1/2 tspn Mixed Spice
1/2 tspn Grated Nutmeg
1/2 tspn Ground Cinnamon
Good Pinch Salt
1&1/4 - 1&1/2 gills tepid milk and water mix

1&1/4 - 1&1/2 gills tepid milk and water mix
Method
Cream the yeast with a teaspoon of sugar. Add half gill of tepid liquid and a sprinkling of flour. Cover with the cloth and leave in a warm place until the surface of liquid is covered with bubbles. Sift the dry ingredients into a warmed mixing bowl. Rub in the butter. Add the sugar, dried fruit and peel. Add the yeast mixture, together with the rest of tepid liquid. Knead lightly and throughly. Cover and leavve in a warm place to rise until doubled in bulk. Then knead again lightly. Cut into 12 pieces and form each into a round. Put on a lightly grased, warmed baking tray and make a cross on each bun. Allow to rise for 15 mins. In a warm place. Bake at 450 degree F for about 12 minutes. Finally, brush with a glaze made from mixing 2 tbspns. Sugar mixed with the same amount of water or milk, after removing from oven.
